LEMON CAKE

Is it just us or do you also desperately want a bite of this lemon cake? This cake is easy to prepare, yet full of taste. That is pretty obvious though.. there is lemon in it! This lemon cake simply makes daily life better.

Follow this recipe and make your guests happy. Or maybe just treat yourself... don't worry, we won't judge!

  • 4 lemons
  • 180 g white caster sugar
  • 3 eggs
  • 5 yolks
  • 75 g butter

Cake bottom

  • 1 pack of Bastogne cookies
  • 150 g butter

Preparation:

  1. Heat the oven to 180°C.
  2. Mix the lime juice, caster sugar, 3 eggs, yolks and 75 g butter. Shake it!
  3. Let this mix of ingredients boil while stirring.
  4. When boiling, leave it boiling for 3 minutes.
  5. Put the mixture back in a mix-bowl and put the mix bowl in a  bigger bowl which is filled with a layer of cold water (note: do not let the water get in the mix bowl). This is how the mixture will be chilled. 
  6. Add the 75 g butter
  7. Smash the bastogne cookies till crumbs. Hello there delicious!
  8. Melt 150 g butter and mix it with the cookie crumbs. 
  9. Place the cookie crumbs in a baking mold and press it till it becomes a solid cake bottom
  10. Put the cake bottom in the oven for 10 minutes.  There it goes!
  11. When ready take out the cake bottom and pour the cake mixture over it. Use a spoon to divide it good. 
  12. Serve the cake with some whipped cream, because: "Whipped cream is always a good idea."
